Baked Masala Twisters | Tea time snacks | Puff pastry recipe



Hello Beautiful People,


This has been my longest break ever but i have been super duper busy with a lot of stuff, first that i had already mentioned that i was on a holiday and than we shifted our base from a super hot place to one one the most amazing weather location in at least the south of India.. Wellington ( Ya i know what you all are thinking .... No its not  Wellington in New Zealand but in Ooty Tamil Nadu) its a beautiful place and trust me one of the biggest reason for being lazy (blame the weather). If i start writing bout the place it will be a never ending post. So, to cut short i will be try and be regular with my post.


Now that my house is all set and i am good to get back to my usual routine. To start with today i am baking something to go with evening tea, masala twisters.


I know its hard to believe but there is this chill in the air that make me keep going back to the kitchen to fix my self a cuppa green tea again and again. Oh my incredible India !!!!!






 Difficulty - Moderate
Bake ti- 8 mins


INGREDIENTS

FOR THE PUFF PASTRY
  • 03 cups - All purpose flour.
  • 100 grms - Butter ( chilled & cut into cubes ).
  • 1/2 tsp - Salt.
  • 01 tsp - Baking powder.
  • Ice cold water for kneading.
FOR THE FILLING
  • 02 tbsp - red chilly powder 
  • 01 tbspn - zeera powder (cumin seed powder)
  • salt to taste 
  • Ghee ( clarified butter)
METHOD
  1. Sift flour, baking powder & salt together.
  2. Add butter and rub the mixture well, add just about enough water to make a tough dough.
  3. Cover the bowl with dough with cling film & keep aside in the fridge for 20 mins.
  4. Lightly flour your surface and roll the dough into a big circle.
  5. Put the butter in the center of the pastry and fold over the right and left sides of the circle, overlapping in the middle.
  6. Press the dough with your rolling pin to make it longer and then lightly mark into three portions.Fold the bottom portion up to cover the middle portion and the top portion down.
  7. Press the dough gently on the edges with your rolling pin. 
  8. Repeat the folds one more time, cover and chill for 20 mins.
  9. Chill for one hour before using.
  10. In a bowl melt ghee in d microwave for 30 seconds and mix red chilly powder, zeera powder and salt and keep aside.
To make Masala twisters -
  1. Roll the sheet into a big chapati.
  2. Apply  the ghee mixture on the pastry sheets and fold it and roll it over again.
  3. Cut long thick strips 
  4. Cut the strip into three parts
  5. Take a part and hold it by both the ends and simply twist them.
  6. Place the twists on a baking sheet, brush some milk on them and set it to bake for 8 mins in a pre heated oven.
  7. Store them in a air tight canister for upto 2 weeks (that is if it lasts that long)

Blueberry Rice Pudding | Dessert | Vegan Recipe


I know I am being rather slow in posting recipes but i am on my way out of Hyderabad & shifting to a new place. Packing and winding up was keeping me super busy. So, while i was cleaning up my fridge, I found a packet of frozen wild blueberries some where in the freezer compartment. So I decided to make a New York cheese cake to actually realise that I have already packed my OTG as well . So, I raided the pantry to find these really tiny looking rice called the Samak Rice in India also called Echinochloa Millet. So I decided to make a rice pudding (kheer) Rice puddings are usually made with eggs but as I have more vegetarian followers so I thought of doing a vegan version.

On a very very popular demand I am giving out the recipe of this dish. Frankly there isn't really a recipe I followed, I simply kept adding what ever kept coming in front of me in my pantry.  And the reason I named it roasted chicken 65 is because my husband is a great fan of chicken 65.(you really have to see his love for  this dish in person to believe me.)

Sattu ke ladoo | Laddu | Indian sweet | Gluten free recipe


Hello... This is the first time ever I have made ladoos/laddus, basically small ball shaped India sweets. Ladoo is a very popular sweet in India, it can be made out of various ingredients. Today i am making sattu ke ladoo. Sattu in English means Horse gram which is grind into a very fine powder. Sattu is used intensively in Bihar, odisha and eastern UP. I came in term with this ingredient almost 5 years back when a dear friend of mine introduced the most popular sattu ke paranthe .Trust me it was mouthwatering. And there on sattu was always there in my pantry. Of late (for bout couple of years) i have even see my father having a glass full of sattu mixed with water with a dash of lime and salt in it.

Strawberry and cream Swiss Roll | Cake | Valentines Day Special


Hello People, wish you all a very happy Valentines day. I am sure you all have your plan to enjoy this day of love. Today me and my friends are planing a surprise potluck valentines eve party for our husbands.( I am sure it isn't really a surprise) But yes we have decided two dishes each and as usual i get the dessert  & a savory too. I asked my friend to give a little idea as to what should i make (well, i just wanted an idea) damn friend made is difficult for me she wanted the dessert to be in red or pink in colour & may be a few hearts in it...phew these valentine days!!! well to cut the story short i made this strawberry Swiss roll/log. This is my first ever attempt and it came out pretty well. Proud of myself :) Infact my mum would make them quite often when i was a kid and somehow i remembered how she used to do it. (the rolling and the works)

Chewy chocolate cookies | Gooey cookies | Christmas recipe



Hello everyone, I am posting almost after 40 days. Not that I was busy and haven't been baking all this while , I was simply being super lazy. As we are just few hours away for x-mas and I thought I must post atleast one recipe today. As the new year 2015 hits I promise to be regular and post as many post as possible.


I am doing a chewy chocolate cookies to start with. As I woke up this morning of 24th dec the weather outside was just perfect for a cup of hot chocolate milk and a chewy chocolate cookie. I so wanted to dunk myself into this chocolaty delight on this foggy and super cold winter morning.

Green Chilli Pickle


Its winters and no Indian meal is complete without a home made spicy pickle. Last Sunday for the first time i went to the local vegetable market near by. In India we call it hatt, its a weekly market, which usually sells more or less each and every item required in your daily chaos. So, while i was totally mesmerized by the freshness and the colours of the vegetables sold there and somehow i just couldn't get my eyes off this huge heap of green chilies. So i got some home and didn't really know what to do with them as i didn't want it to go bad. So, finally i decided to make a green chilly mustard pickle. This pickle is quite a staple in Assamese meals but the version i am doing has a major influence of north India.

Dal Makhani | Indian Recipe | Vegan version



As winters have just about set in, and woolens have been sunned. I am set to welcome the minimalist winters here in the southern part of my country. I miss those lovely winters of the north where you clad yourself with layers and layers of clothing. Ahhhh... Can't really get those winters here but atleast I can cook myself some favorite recipes that are especially cooked this time of the year. One of my personal favorite has to the "dal makhani".  As a child I just hated daal ( all kids that age did or still do ) until 5 years back I tasted the most amazing Dal makhani in the royal city of Jodhpur. And believe you me the taste was to die for and since than I have crazily fallen in love with that dish.. Not that I found the same taste else where but just the thought of that taste keeps my love alive for it.

Mixed herb bread


Hello everyone, here's another bread recipe for you all. The other day when I made garlic rolls I had some dough left so I decide to do another bread version there and than. I really didn't follow any recipe so I don't know what to call it. I guess I would simply call it mix herb flat bread.  Ingredients that I used was what ever I saw at that moment in front of my eyes on my spice & herb rack. But to make it's even easier I will give you the exact herbs . So go on and enjoy

Garlic Rolls | Tea Time Snacks


It's been a while since I have baked. Today I am doing a very very simple yet melt in the mouth bread roll. Garlic rolls that I would like to call them. They are absolutely marvelous. The other day I was going through a few food communities and I came across this recipe. I couldn't believe it could be so easy to do and taste so lovely at the same time. And because I had not baked for a while I couldn't stop my self from trying it out ASAP.

Gulab Jamun is one of the most popular mithai's in India ( Mithai means  sweet dish) almost every region in Indian calls it gulab jamun but has a bit of variation in its size and shape. Bread gulab Jamun is the simplest and easiest version . Probably over the time I will post the recipe of the original khoya version and also the ready mix version which is readily available in the market called the Gulab Jamun mix.
