Milk Fudge | Doodh Barfi | Indian Sweet


Hii friends... I know it been a while since i have posted on my blog. The reason is known to all as i have mentioned it before too.. Off late we have been travelling a bit too much, its been almost 7 weeks of total fun and travel.
And getting back to work needed some kick on the back side. Which my friend finally did today. So there it is The Milk Fudge or the simple Mawa Barfi.


As the festive season is on and Karwa Chauth just 2 days away I decided to start with a traditional yet a simple sweet made in most of the households in Indian. Well, Karwa Chauth is a day long festival in North India, women observe fast for the safety, longevity& good health of their husbands but thanks to the television industry in India, now almost the entire country follows it for the glam & filmy factor.


Today I am doing doodh barfi its a simple translation Doodh means Milk & Barfi means fudge. Its one of the very basic sweets thats made in India and requires milk, sugar and flavor of your choice, i am using cardamom, you can use saffron or any other as per your taste. In traditional times people used to caramelizing the milk from the start (basically solidifying milk on low flame for hours altogether) but now khoya is easily available in the market or any sweet shop.


Ingredients    


  • 500 gms - khoya / mawa
  • 200 grms - sugar 
  • 4 - 5 tsp - ghee
  • 1/2 tsp - cardamom seed powder
  • sliced or chopped - pistachios & almonds for garnishing.
Method 

  1. Place 3 tbsp ghee in a heavy bottom pan or kadai 
  2. Add khoya and roast on a slow heat till it gets medium brown. ( it will take 20-25 minutes )
  3. Meanwhile in another pan make sugar syrup by adding sugar and 1/4 cup water. Boil and simmer for 5-6 minutes. 
  4. Add sugar syrup in to roasted khoya and keep stirring, add cardamom powder and whole nuts. 
  5. Mix everything for 4-5 minutes on a medium flame. 
  6. Transfer a mixture into a greased tray and level it out with spoon. 
  7. Sprinkle all the chopped dry fruits over the mixture.
  8. Let it cool completely and cut them into desire shape. 


In case you are interested in microwave khoya recipe (i had googled for this recipe and was quite a success) 

Ingredients
  • 250 gms - paneer or ricotta cheese
  • 1 tsp- ghee
  • 3 tbsp - milk powder
  • 3 tbsp - cream 
Method

  1. Take a microwave safe bowl add the paneer/cheese and microwave foe about 3-4 mins
  2. Mix well and add ghee ,milk powder and cream. Mix well again & microwave again fr 5 mins, keep mixing in between.
  3. Remove the bowl and kneed the mixture very well.
  4. let it cool completely kneed again.
  5. Mawa/ khoya is ready for use
