Atte ke halwa is a popular sweet dish in North India. My childhood memory of this is of the gurudwara's. I remember dragging my parents every Sundays to the near by gurudwara so that i could get to eat my favourit halwa. The place i belong to Assam, halwa is not really a specialty and people can really go wrong with it. i remember as a kid i would hate halwa only because of the wrong preparation of it. For us in Assam sooji halwa ment only baby food and not a dessert. As i grew up in a community where me & my family met people from almost every state in India. Now i can proudly share the perfect recipe of atte ka halwa & believe me it tastes good.
Yesterday our neighbor and us sat down for dinner and i realized i didn't have dessert to serve them. So i decided to make atte ka halwa (which i made & had after almost 2 yrs) Another reason probably was the cold rainy season here in hyderabad . This recipe is given to me by my friend who belongs to Himachal Pradesh.
For the perfect atte ka halwa, you need to roast the wheat flour perfectly till it turns brown (brown not burnt). Unless its roasted properly the halwa will turn sticky.
Ingredients
- 01 Cup - Whole wheat flour
- 01 Cup - Ghee (clarified butter)
- 01 Cup - Sugar
- 03 Cups - Water.
Method
- Take a non-stick pan. Dry roast the whole wheat flour on low flame, until the flour turns light brown.
- Add ghee and roast for another 5 mins.
- In the mean while, take a sauce pan and make sugar syrup combining sugar and water till the sugar dissolves completely.
- Pour the sugar syrup slowly in the roasted flour pan, and keep mixing so that no lumps are formed.
- Once you a a smooth paste like consistency. Let it cook for about 10 mins, stir occasionally so that it does not stick to the bottom of the pan.
- You may add dry fruits. But personally i like it without any added flavor.
- Tastes best when served hot or warm.
