Hello everyone, we had a super duper busy last week. So couldn't post too often. Today after getting my house in place(it was dirty and how) i decided to make these cookies which have been a part of my childhood memory. I remember every time we visited my maternal Aunts & Uncles place we would be given these small coconut balls (Narikol'or laddo, nariyal ke laddo) , unlike the once in North India, laddos in North east are harder and is made only with sugar & coconut. Yummm.. the taste still lingers in my mouth. To make those you need to be super experts as you roll the coconut & sugar mixture straight out of the wok (its burning hot)
So, instead of making those i thought of making these cookies.
I was hesitant in making these cookies as its a absolute love hate ingredient. People who love it are crazy for it and people who do not enjoy it, can not stand even the smell of it. But as i am found of it, i went ahead. i am sure you guys too will enjoys these soft centered melt in the mouth cookies.
Love the sweet & crunchy texture it gives to any dish.
Prep time - 15 mins
Cooking time - 15 mins
Cooloing time - 10 mins
INGREDIENTS
- 1/4th cup - refined flour
- 01 cup - condensed milk
- 1//4th cup - milk
- 02 Tbsp -semolina
- 2 1/2 cups - dedicated coconut
- 1/4th cup - broken chewnut
- 1/4th cup - raisins
- 1 tsp - baking powder
METHOD
- Blend the condensed milk & milk together.
- Stir in flour with a wooden spoon, mix till blended well.
- Add the remaining ingredients into a batter.( if the batter is still watery add some more samolina)
- In a muffin tin place one and a half teaspoon of the above batter.(i prefer muffin tins as it retains the shape of the cookies)
- Place on broken chewnut on each cookie batter placed in the muffin tin.
- Bake at 180 C for 15 mins or till golden brown.
- Cool on a cooloing tray for 10 mins
