Healhty Breakfast Muffins




This one is for all my friends who don't get time to eat right or eat at all in the morning, all thanks to the super busy schedule that they follow. Right from getting their kids ready for school to making sure the husbands leaves home with out forgetting anything back to getting the house right & finally heading out.


These muffins can be stored as the usual muffins up to 7 days under refrigeration.All you need to do is just pop in one with a glass of milk or juice and u are sorted. Its so yummy that you will not mind having it every day.


Breakfast is indeed the most important meal of the day & yet that's the meal we don't really give as much importance to. Every second day we read about it in the new papers/ magazines.... but where is the time. So here are the usual oats porridge in a muffin version.


Prep time - 10 mins
Bake time - 10 mins              
Makes - 09 muffins


Ingredients

  • 02 medium - ripe banana
  • 02 medium - eggs
  • 01 tablespoon - olive oil
  • 1/4th Cup - milk
  • 1/4th cup - whole wheat
  • 3/4th cup - instant oats 
  • 1/3rd cup - Brown sugar
  • 1/4th of a slab - dark chocolate 
  • 1 tspn - vanilla essence
  • 1 tspn - baking powder
Method
  1. In a bowl, mash banana's with a fork. Add milk,sugar,oil & vanilla, beat well.
  2. Mix all the dry ingredients & form a smooth batter.
  3. Separate 1/4th of the mixture and add melted chocolate slab, mix well.
  4. Line a muffin tin with paper cups & pour both the mixture in 1:2 ratio. Swirl the batter with a knife 
  5. Bake for 10 mins or Till a knife come out clean.
