Cheese & Onion Bread




I guess its been a bready week for me, Some how every morning after waking up i have been wanting to do a bread. And i promise no more breads for a while after this post.






The first time i had this bread was when i was traveling to Sweden way back in 2005. I had an halt at Heathrow Airport for about 18 hrs & I wanted to do so much. i wanted to see the London eye, Buckingham Palace, Trafalgar square, Big Ben, Borough market, Camden market and what not. So to take out time for eating was out of question. I picked up this bread from a local baker & i was sorted for the day. The bread was huge &because of the onion & cheese topping i didn't really need anything along with it. Since then i had never eaten this bread again.





So as i woke up this morning, I just wanted to eat that bread( probably i had a dream of being on the streets of London again) i remember the taste very faintly, but i shall not give it up without trying. 


Prep time -1 hour 
Bake time - 35 mins

Ingredients 
  • 60 grms - cold butter
  • 02 tblsp - yeast 
  • 1/2 cup - warm milk
  • 1/2 tspn - sugar
  • 02 cups - all purpose flour
For the topping 
  • 02 medium - red onion
  • 1 tspn - Oregano 
  • 1/2 tspn - Chilly flasks 
  • 1 cup - Shredded cheese (mozzarella & processed mix)   
  • Salt (if required)

Method

  1. Mix 1/4 cup of lukewarm milk add yeast mix and keep aside for 15 mins to ferment.
  2. In a mixing bowl add all the dry ingredients along with cold butter, give it a nice mix.
  3. Now add the remaining milk to the yeast mixture & pour over the dry ingredients slowly as you knead into a soft dough.
  4. Cover the dough with a moist cloth and keep aside for about 45 mins in a warm place.
  5. The dough would have raised to double its size, knead it again.
  6. Shape the dough into round & flat.
  7. In the mean while cut onions into fine slices, in a wok/pan add butter and fry the onion till golden brown. Add the seasonings.
  8. Put the fried onions on the flat dough along with the cheese.
  9. bake for 35 mins at 180 degrees.
  10. Cool on a chilling rack for 10 mins and serve or store in an air tight container up to 2 days.
