Gutte ki Sabzi


As i wake up this morning & I realised it's already Thursday and I have a bigggggg day coming up on Saturday ....lots & lots of cooking to be done. We are hosting a dinner  at our place & have invited some(some is surely an understatement) of our friends . Still have to get the grocery in place,plan the indoors seating (it's still raining here in Hyds )  & generally motivating myself. Have planned an Indian meal & it surely need some prep. Doing a pure "apno Rajasthan gatte ka saag"(gram flour dumplings in yogurt gravy) as one of the dishes so here i prepare the dumplings before hand & on the finally day just prepare the gravy & serve it along.



Ingredients

For the dumplings


  • 1/2 cup besan (gram flour)
  • 1/2 teaspoon red chilli powder
  • Salt to taste
  • 1teaspoon saunf(anniseed)
  • 1/2 tsp saunf powder
  • 10-12 kalongi (onion seeds)
  • 1 tbspn oil
For the gravy 

  • 1tsp jeera
  • Hing 1pinch
  • 1/2 tsp turmeric 
  • 1/2 cup tomato purée
  • 1/4 cup yogurt 
  • 2 tbspn coriander powder
  • 1tsp red chilly powder
  • 2tsp kasuri methi
  • Salt to taste
  • Oil
METHOD

For the dumplings 

  1. Mix besan, red chilli powder, salt, saunf , kalongi & oil in a mixing bowl 
  2. Knead into a hard dough 
  3. Make 6 rolls out it & put them in boiling hot water. Boil till they start to float.
  4. Cut them into 1" long pieces . Keep aside 
For the gravy
  1. Heat oil 
  2. Put hing & jeera let it crackle 
  3. Add tomato puree, turmeric, chilly powder ,coriander powder & salt. Let all the ingredients cook well till oil oozes out of the masala 
  4. Now add the curd cook for 5 minute.Add the dumplings & kasuri methi 
  5.  Simmer & cook for 10 mins 
  6. Garnish with fresh coriander leaves & split green chilies. 

I hope you all enjoy this yummy rajasthani dish as much as i do ... Now i better get back to my things to do list .. Tada
