Lemon drizzle cake



Today while walking up till the ATM near my house i realized the summers are here and its gonna be a really hot hot summer this year. i nearly fainted while walking back. Drank almost 2 liters of water ... phew the summers are surely here !!! Opened my refrigerator to find half a dozen of lemon lying all around( remains of the party last weekend) So what better the a lemon drizzle cake. Frankly the lemons were going bad and i hate to waste anything especially if it could be recycled into something yummy & refreshing.



The truth is i made one yesterday and god my OTG gave me a tough time really don't know whats wrong with it. The lemon cake which came out was a disaster.So made one more this one looks quit edible though 
still doesn't look the way i wanted it to be. But never mind it still tastes good.



Ingredients 

For the cake 
  • 100 grms - softened (unsalted)
  • 100 grms - caster sugar
  • 1/2 lemon - finely grated zest 
  • 1/2 tsp - lemon juice
  • 01 - egg
  • 150 grms -  plain flour(maida)
  • 1/2 tsp - baking powder
  • 1/2 cup - milk
For the icing 
  • 150 grms - icing sugar
  • 3-4 tblsp - lemon juice.

Method
  1. Pre-heat the oven at 180 degrees.
  2. In a bowl mix maida & baking powder & keep aside
  3. Cream butter & sugar together till it appears creamy 
  4. Add the egg, lemon zest & lemon juice.Beat well. 
  5. Spoon by spoon add the dry ingridents
  6. Add milk.
  7. Pour the above mixture in a greased tin & bake for about 25-30 mins 
  8. Cool the cake on a wire rack.
  9. For the Icing - Take icing sugar into a bowl and add just enough lemon juice to make a flowing consistency paste(just enough that it spreads on it own)
  10. Pour it over the cake. Cut into slices & serve.

Enjoy this yummilicious cake with a refreshing cup of green tea. Perfect combination for the up coming summers.
