There is this bakery in Nagpur from where I tasted my 1st ever lemon tart/pie. A friend of mine from hostel in Delhi used to get it for all of us when ever she returned back. That taste still lingers on my taste buds. Unbelievably delicious. I really hope that one day I can share that recipe with you all too.
- 3/4 cup - butter at room temperature
- 1/2 cup - white sugar
- 1/2 tsp - vanilla essence
- 1 pinch - salt
- 1 3/4 cups - all purpose flour.
- 1 no. - Egg yolk
- 1/3 cups - caster sugar
- 1 tsp - Finely grated lemon rind
- 2 tsp - Lemon juice
- 50 grams - Butter chopped
CRUST
- Pre-heat oven at 175 degrees.
- Combine butter, sugar ,vanilla & salt in a mixing bowl.
- Mix the ingredients thoroughly.Mix flour and make a smooth dough.
- Press the dough to small tart tins & refrigerate for 30 mins.
- Bake the tarts for 5-6 mins or till done & golden brown.
FILLING
- Place egg, egg yolk, sugar, lemon rind and lemon juice in a heavy-based saucepan. Whisk to combine. Add butter. Place over medium heat. Cook, whisking, for 7 to 8 minutes or until mixture coats the back of a spoon. Remove from heat. Stand for 5 minutes.
- Pour into a small bowl. Cover surface with plastic wrap. Set aside to cool completely.
- Spoon 2 1/2 tsp lemon curd in each pastry case. (i used my icing gun to fill each case)
- Garnish with finely chopped pistachios. Serve
