Lemon Tart | Lemon Pie





Hello everyone, have not been able to post too often off late because I have been tied up a bit. Won't be able to post for the next whole week. Have guests over.. But look out for some really lip smacking delights in the future.
This recipe too was done some time last month (April) but just couldn't post it.
It's not a original recipe of mine, I followed it from  allrecipes.com & it turned out just perfect.


There is this bakery in Nagpur from where I tasted my 1st ever lemon tart/pie. A friend of mine from hostel in Delhi used to get it for all of us when ever she returned back. That taste still lingers on my taste buds. Unbelievably delicious. I really hope that one day I can share that recipe with you all too.

Ingredients

  1. 3/4 cup - butter at room temperature
  2. 1/2 cup - white sugar
  3. 1/2 tsp - vanilla essence 
  4. 1 pinch - salt
  5. 1 3/4 cups - all purpose flour.

  • Lemon Curd
  1. 1 no. - Egg yolk
  2. 1/3 cups - caster sugar
  3. 1 tsp - Finely grated lemon rind
  4. 2 tsp - Lemon juice
  5. 50 grams - Butter chopped


Method 

CRUST
  1. Pre-heat oven at 175 degrees.
  2. Combine butter, sugar ,vanilla & salt in a mixing bowl.
  3. Mix the ingredients thoroughly.Mix flour and make a smooth dough. 
  4. Press the dough to small tart tins & refrigerate for 30 mins.
  5. Bake the tarts for 5-6 mins or till done & golden brown.
FILLING 
  1. Place egg, egg yolk, sugar, lemon rind and lemon juice in a heavy-based saucepan. Whisk to combine. Add butter. Place over medium heat. Cook, whisking, for 7 to 8 minutes or until mixture coats the back of a spoon. Remove from heat. Stand for 5 minutes. 
  2. Pour into a small bowl. Cover surface with plastic wrap. Set aside to cool completely.
  3. Spoon 2 1/2 tsp lemon curd in each pastry case. (i used my icing gun to fill each case)
  4. Garnish with finely chopped pistachios. Serve
